This Gyuto series combines expert forging with superior cutting performance. At the core of the blade is ApexUltra steel, hardened to 66 HRC, ensuring a consistently fine edge. A nickel dividing line visually separates the core from the 50-layer Damascus steel outer layers.

With a cutting edge length of 238 to 240 mm and a blade height of 59 to 60 mm, these knives offer balanced handling and ample finger clearance on the cutting board. The continuous tapering of the blade spine tapers from 4.50 to 4.90 mm at the base to 0.90 to 1.00 mm near the tip. The convex grind facilitates effortless gliding through ingredients, while the blade weighs between 147 and 168 grams, ensuring clean food release. Due to the handcrafted nature of this small production run, slight, individual dimensional tolerances may occur between each blade.

As part of our Modular Takedown System, the blade is manufactured separately and can be flexibly combined with all compatible takedown handles. Handles are made to order, so production and shipping can take 2-4 weeks.
