The Gyuto 230mm combines precise forging craftsmanship with high cutting performance. At the core of the blade is ApexUltra steel, hardened to 66 HRC, which ensures long edge retention and fine sharpness. A nickel diffusion line cleanly separates the core visually from the 50-layer "Dark & Stormy" Damascus cladding, whose dark etched finish gives the blade a striking structure.
 
With a 230 mm cutting edge length and a 58 mm blade height, this Gyuto offers balanced handling and ample knuckle clearance on the cutting board. The taper of the spine runs from 5.80 mm at the base, through 2.20 mm at mid-blade, to 1.10 mm near the tip. The convex grind supports effortless gliding through ingredients at a blade weight of 160 grams and ensures improved food release.
 
As part of our Modular Takedown System, the blade is manufactured separately and can be flexibly combined with all compatible takedown handles. The handles are made to order, so production and shipping can take 2-4 weeks.
