The Gyuto 227mm combines precision forging with high cutting performance. At the core of the blade is ApexUltra steel, hardened to 66 HRC, ensuring long-lasting edge retention and a fine, sharp edge. A subtle copper dividing line separates the core from the 50-layer Damascus steel outer layers, preventing carbon migration. 
 
With a 227 mm cutting edge and a 58 mm blade height, this gyuto offers balanced handling and ample finger clearance on the cutting board. The continuous distal taper narrows the blade spine from 4.60 mm at the base to 2.40 mm in the middle and 1.00 mm near the tip. The convex grind facilitates effortless gliding through food, all while the blade weighs 167 grams. 
 
As part of our Modular Takedown System, the blade is manufactured separately and can be flexibly combined with all compatible takedown handles. The handles are made to order, so production and shipping can take 2-4 weeks.
