The 226 mm Gyuto combines solid blacksmithing craftsmanship with high cutting performance. At the core of the blade is ApexUltra steel, hardened to 66 HRC, delivering exceptional edge retention and a razor-sharp edge. A clean nickel barrier line visually separates the core from the 50-layer Damascus cladding.
With a 226 mm cutting edge and a 58 mm blade height, this Gyuto offers balanced control and ample knuckle clearance on the cutting board. A continuous distal taper thins the spine from 5.00 mm at the heel down to 2.30 mm at the midpoint, tapering to 0.95 mm just 20 mm from the tip. The convex grind allows the blade to glide effortlessly through ingredients while reducing food sticking.
As part of our Modular Takedown System, the blade is produced individually and can be flexibly paired with any compatible Takedown handle. Handles are made to order, so completion and shipping may take 2–4 weeks.
