The Stainless Clad Bunka combines the striking blade shape of traditional Japanese knives with state-of-the-art materials engineering. The core layer made of pure ApexUltra steel is hardened to 66 HRC, offering outstanding edge retention and an effortless cut. A fine nickel diffusion barrier protects the blade against carbon migration while creating a bright visual accent against the stainless 1.4034 steel cladding. With a blade height of 58 mm, the Bunka offers maximum knuckle clearance and excellent control. The highlight of this model is the C-grind, which reduces the sticking of wet produce. The blade tapers significantly towards the front from a powerful 5.50 mm at the spine. The handle, made of durable desert ironwood in a "Crowned" profile, sits comfortably and securely in the hand, providing a slightly handle-heavy balance.
